The Consortium

Protection of a PDO Excellence

The Consortium was established on May 27, 2015, to protect and enhance Carpegna DOP Ham, a product representing an invaluable enogastronomic heritage of the Marche and Italian territory.
The values, characteristics, breeding methods, and production are unique elements that have earned it,

since 1996, the protected designation of origin - PDO.
The Consortium's protection work thus ensures to maintain the high standards of quality and excellence of this product with its distinctive taste and aroma, whose origins date back to the 1400s.

As always,
it starts from home

The Consortium was born here, in a land nestled on the hills of Montefeltro where nature is lush, that typical Marche landscape that welcomes the dry, brackish air from the Adriatic and an extremely pure microclimate, in a unique context that contributes to the extraordinariness of this protagonist of Italian charcuterie.
Carpegna is an ancient village with strong charisma, which still retains its historicity, artistic and cultural richness today, and is the silent and virtuous witness of the processing of Prosciutto di Carpegna PDO and its extraordinary history. Geography is the focal point that also traces the production process; indeed, it is its beginning because it circumscribes the origin of the raw material, limited to only three regions: Marche, Emilia Romagna, and Lombardy.

A Taste to Protect
and Preserve

Although the processing of Prosciutto di Carpegna PDO has ancient origins, it was only at the end of the '60s that a real production facility was established, whose production is regulated by a precise set of rules. Restrictions that act on the production area and on defining all the timings that allow the product to fully fall under the protected designation of origin, preserving its centuries-old tradition.
